chore: Automating plugin version for plugins

Description

As part of #303 we need to update the composer version (and also plugin version for future when they are released)

This does the following

1. Adds a script to each plugin called "version" which should run as part of the changset release branch workflow - https://github.com/wpengine/hwptoolkit/blob/main/.github/workflows/create-release-branch.yml
2. Update composer.json, readme.txt and main plugin versions based off the package.json version
3. Also added a small fix to failing e2e tests workflow.

Note

Unfortunately we cannot test this locally so we will need to try and update a plugin to see if the release branch updates the version. The good news is this doesn't need to be merged unless its correct.
