chore: Previews and Workflow Tidy up

Description

1. Fixes workflow issues when you re-name the plugin directory (thanks @josephfusco )
2. Refactored e2e tests so other plugins can you use this
3. Rewrote testing docs for Previews and added a script for developers to setup their Docker setup
4. Added docs for Actions and Filters
