chore!: Upgrade to kube 3.0.1 and k8s-openapi 0.27.0

Description

As part of the bump we had to switch from chrono to jiff for the parts where we interact with kube.
For consistency reasons I also switched over the EOS checker, so we now only depend on jiff.

There are still oddities in the generated CRDs - but apparently they are valid.

We can probably push on ahead and bring the fixes in as they become available.
