This addresses a couple of TODOs in #1998.
Note that it's not that helpful in the above-mentioned PR, because the number of tokens among wallet's UTXOs will be small anyway. But in my other branch, where I implement a CLI command to list all active orders, the difference is noticeable.
I also refactored token-related tests in the chainstate test suite a bit, to do additional consistency checks on various token-related data.
