Update to use dolfinx v0.10

Proposed changes

Minor changes required for FESTIM to use the latest dolfinx v0.10 release. Updates have also been made to the work flow to test in environments built using v0.9.0 and v0.10.0 as well as the requirements in the pyproject.toml.
