This PR backports a version alignment fix from the release/10.1 servicing branch to main. The change ensures that the Microsoft.McpServer.ProjectTemplates package version is explicitly set to align with the ModelContextProtocol packages it references.
- Adds explicit version properties (MajorVersion, MinorVersion, PatchVersion, PreReleaseVersionLabel) to set version to 0.5.0-preview.1
- Aligns the template package version with ModelContextProtocol and ModelContextProtocol.AspNetCore packages defined in eng/packages/ProjectTemplates.props
- Follows the same versioning pattern used by other template packages in the repository (e.g., Microsoft.Agents.AI.ProjectTemplates)

Caught this while validating [release/10.1] AI Project Template Servicing (#7169). This is included in that PR as well, but this backports the change into main.
