eng: set version to 2.0.0-alpha.1, update metadata/docs/CI - BNCH-112051

This change is only for Benchling's internal use of the package and will not be submitted to the upstream repo.

• Update version so we can publish a test build internally
• Update GitHub workflows config, remove the release job (this is left over from upstream and will all be replaced with our own preferred CI system, but in the meantime this lets us see that the tests pass)
• Add ourselves as co-authors in the metadata
• Update readme to clarify what this all is
