Updated EmbyServer.xml to reflect new configuration options and improved documentation.
Changed network mode from 'bridge' to 'host' for EmbyServer per official docs
Per the official Emby documentation, the :beta image does not require any additional configuration or container parameters. No additional template is needed when switching from :latest to :beta.

Updates the EmbyServer template to version 2 format with current Unraid best practices, better default UID/GID values (99/100), and clear hardware acceleration setup instructions for Intel and NVIDIA GPUs. Also deletion of the not really needed embyserverbeta template.
