[Gap]: Document vMCP observability #380

What needs documentation?
With stacklok/toolhive#2906, we added configurable observability for the vMCP server. The configuration may be done through the vMCP operator, just like here. We produce a few more metrics and spans than the proxy, which are documented in the linked PR.
