Minimal image documentation difference between UBI8/RHEL8

I have noticed that the RHEL8 documentation for the minimal image does not mention the specifics of the minimal image - it seems to be a copy of the documentation for the regular nodejs-14 image.

I am not sure if both sets of documentation are updated from this repository, but I figured they should be in sync.

Sorry we do not have resources for updating Documentation currently, even if it is easy
