Some LLM provider tests fails

Expected behaviour

100% pass rate

No idea exactly why, seems to structure reading the response from the endpoint's response object.

I refactored LLMs and also tests to support more recent models variations. Test have been broken down into individual files for each provider and they all pass (some with expected warnings). Relates to #128
