Java 25

Java 25 is the newest lts, we should run it in CI.

Separately, should we remove support for java 11?

We should keep source compatibility to java 11 for older android, but for CI we could just compile with java 25, imo.
It might be a good idea also to configure foojay-toolchains to auto download and use java 25 in gradle
