Reformat documentation #103
Description
Currently the documentation is a single, long README file.
This is great for searching it using Ctrl + F, but it makes it feel more overwhelming to read and makes some third party websites that attempt to render the readme really slow.
Split up most parts of the documentation (except for a quick getting started guide) into smaller files inside a new docs/ directory
