Can OpenAPI Generator finely manage the added API: for example, set default values for some parameters of this API, and then automatically generate SDK in various languages according to the set API, and provide call examples.

I mainly want to simplify the call, and set all the parameters that can set the default values, so that the calling side can simply call the API.

Yes, that is possible. Depending on the language, there will always be an absolute fallback value (null). But the default value can be specified in the API-models themselves.
