Rewrite PoS Heimdall Checkpoint docs

This commit includes a complete rewrite of the checkpoint docs, which
merges two previously distinct checkpoint documentations on the wiki and
cleans them up.

I still need to check with Krishna to understand how much of this stuff
is out of date, or not.
